Sticky Lemon Tofu and Veggies
Live, laugh, love tofu! Do you enjoy tofu as much as us? Then try this delicious sticky lemon tofu and veggies! With an amazing sticky sauce and healthy veggies, this Chinese inspired dish makes the perfect dinner or lunch.
Ingredients
- 400 grams tofu
- 2-3 spring onions
- 150-200 grams mung bean sprouts
- 1 bok choy
- 2×4 cm ginger
- 2-3 cloves garlic
- sesame seeds optional
- 150 grams rice (dry weight)
Sauce
- 125 ml or 1/2 cup water
- 3 tbsp soy sauce
- 1 lemon: zest and juice
- 1/4 cup or 40 g cornstarch
- pepper
- sugar
Instructions
- Pat down the tofu with a paper towel and chop into cubes.
- Chop the ginger, garlic and spring onions into small pieces.
- Wash the bok choy leaves and chop horizontally.
- Wash the bean sprouts.
- Prepare the sauce by adding all the ingredients in a bowl, adding the cornstarch last. Slowly stir the sauce until the cornstarch is fully incorporated
- Cook the rice according to the instructions on the package.
- In a large pan, add some oil and put it on a medium high heat.
- Once the oil is hot, add the tofu. Let it crisp for around 5 minutes until golden whilst mixing occasionally.
- Optional for extra flavour: when the tofu is ready, take the pan off the heat and add 2 splashes of soy sauce over the tofu. Immediately mix. It will sizzle a lot, so be careful in case there is a lot of oil left in the pan.
- Take the tofu out of the pan, and add the ginger, garlic and most of the spring onions into the pan at medium-high heat for 2-3 minutes. Stir occasionally.
- Add the bean sprouts and wait for 2 minutes before adding the bok choy.
- After adding the bok choy, wait 2 minutes and add the tofu back into the pan.
- Stir the sauce again to ensure it is mixed before pouring it into the pan. Lower the heat slightly and mix well.
- The cornstarch in the sauce will make the sauce sticky when it gets warm. Leave the mixture on the heat for a bit. Then, mix and repeat this process until all of the sauce has become sticky.
- Turn off the heat and add the rest of the spring onions.
- Serve the tofu mixture with the rice and optionally garnish with sesame seeds.
