Spring Rolls

It isn’t just the deliciousness that makes these rolls worth making, the process of making them is also super fun! So invite your friends over and get rolling! It does take a bit of practice, but once you get the hang of it, you will be able to produce the best looking spring rolls ever. They are perfect for lunch or as a snack, because they are eaten cold. But also ideal for parties, since you can prepare them beforehand and don’t require any cutlery. Or as a dinner. Actually, they are great for any occasion! Have fun and enjoy!

Ingredients
  

  • 75 grams dried rice vermicelli
  • 200 grams tofu
  • 8-10 rice paper sheets
  • 1/2 cucumber
  • 1/2 carrot
  • 10 grams fresh mint
  • 50 grams chopped peanuts or cashews

Tofu Marinade

  • 3 tbsp hoisin sauce
  • 2 tbsp ketjap manis
  • 1 tbsp lime juice

Instructions
 

  • Place the vermicelli in a bowl and cover with boiling water. Leave for 10 minutes and drain well. Using a scissor, cut the vermicelli in smaller pieces.
  • For the marinade, add the hoisin sauce, ketjap manis, lime juice and 3 tablespoons of water to a small pan. Warm over low heat.
  • Cut the tofu in sticks of 1 cm wide sticks. Pat the tofu dry with some kitchen paper or a clean towel.
  • Heat some oil in a frying pan and once the oil is warm, place some of the tofu sticks in the pan.
  • If the tofu is golden on one side,you can flip it. Keep repeating this, until all sides are nice and golden.
  • Once fried, transfer the tofu to the pan with the marinade.
  • When almost all the liquid from the marinade has evaporated, remove the pan with the tofu and marinade from the heat. You should have some nice tasting and sticky tofu sticks.
  • Cut the cucumber lengthwise and remove the seeds using a spoon. Cut the cucumber and the carrot into matchsticks
  • Mix the chopped peanuts and mint.
  • Now it’s time to start rolling. Place all the ingredients around you, leaving space to work in front of you.
  • Place a rice paper on a big plate with warm water. Wait a few seconds, until the paper has softened and can easily be worked with.
  • Once soft, place the paper in front of you and put some vermicelli, carrot, cucumber, tofu, mint and peanuts a bit below the middle of the rice paper, in a horizontal line of about 10 cm.
  • Fold the sides of your rice paper over your filling. While holding down the sides, grab the side that is closest to you and roll it over your filling, while making sure the sides are tucked underneath. Then roll the rice paper roll away from you until you have a nice roll!
  • Don’t worry if the first few ones aren’t pretty, practice makes perfect! If the filling is spilling out, you can always put an extra rice paper around your spring roll.
  • Repeat until you have finished you're fillings
  • Serve the spring rolls with some soy sauce or sweet chili sauce and enjoy!

Notes

The rolling of the rice paper is almost identical to rolling a burrito!
