Saint-Nicolas Cake

Ingredients
  

Cake

  • 225 g wheat flour
  • 200 ml plant milk (any plantmilk works)
  • 200 g granulated sugar
  • 90 ml plant based oil (sunflower, olive)
  • 2,5 tbsp koek- en speculaaskruiden (speculoos spices)
  • 2 tsp baking powder

Butter Cream

  • 100 g plant based margarine
  • 200 g powdered sugar
  • 1 lime
  • 1 tsp vanilla extract

For Decoration

  • optional: Pepernoten

Instructions
 

Cake

  • Preheat the oven to 160 degrees celsius.
  • Mix the flour, baking powder, 'koek- en speculaaskruiden' and sugar together in a bowl.
  • Add the oil and milk of your choice and mix in by hand until it becomes a smooth batter.
  • Put some oil/baking paper into a baking tin.
  • Pour the batter into the tin and place it in the oven for approximately 45 minutes.

Butter Cream

  • In the meanwhile, mash the margarine and powdered sugar with a fork into a creamy texture.
  • Add the vanilla extract, lime juice and some grated lime zest and mix it in.

Decorating

  • Let the cake cool down completely and then spread the butter cream on top.
  • You can decorate it with some (crumbled) pepernoten and lime slices.
  • Enjoy!
