
Saint-Nicolas Cake

Ingredients
Cake
- 225 g wheat flour
- 200 ml plant milk (any plantmilk works)
- 200 g granulated sugar
- 90 ml plant based oil (sunflower, olive)
- 2,5 tbsp koek- en speculaaskruiden (speculoos spices)
- 2 tsp baking powder
Butter Cream
- 100 g plant based margarine
- 200 g powdered sugar
- 1 lime
- 1 tsp vanilla extract
For Decoration
- optional: Pepernoten
Instructions
Cake
- Preheat the oven to 160 degrees celsius.
- Mix the flour, baking powder, 'koek- en speculaaskruiden' and sugar together in a bowl.
- Add the oil and milk of your choice and mix in by hand until it becomes a smooth batter.
- Put some oil/baking paper into a baking tin.
- Pour the batter into the tin and place it in the oven for approximately 45 minutes.
Butter Cream
- In the meanwhile, mash the margarine and powdered sugar with a fork into a creamy texture.
- Add the vanilla extract, lime juice and some grated lime zest and mix it in.
Decorating
- Let the cake cool down completely and then spread the butter cream on top.
- You can decorate it with some (crumbled) pepernoten and lime slices.
