Pasta Bolognese

Ingredients
  

  • 1 onion
  • 2-3 cloves garlic
  • 200 g tofu or vegan mince
  • 2-3 tomatoes
  • 150 ml tomato sauce
  • 200 g spaghetti
  • fresh basil and some of your favourite spices (like chili, paprika and rosemary)
  • vegan cheese (optional)

Instructions
 

  • Cut the onion into small cubes and mash the garlic and some salt together with a fork. If you use normal tofu also mash this with a fork, until it has a mince texture.
  • Add the onion, garlic and minced tofu/mince to a pan with olive oil. Season with (for exmaple) chili, paprika powder, rosemary and provencal herbs.
  • Boil water for the pasta.
  • When the mince has a good colour, cut the tomato into cubes and add to the pan. Once the tomatoes have softened and formed a sort of sauce with the mince, add the tomato sauce to the pan.
  • Boil the pasta till it is slightly undercooked (1-2 mins left to go).
  • Add the slightly undercooked pasta to the pan with sauce and cook until ready. If you need more fluid, use some of the pasta water.
  • Season to taste with basil and the other spices. If you want you can add some vegan cheese. Enjoy!
