Lemon & Pea Soup
You might associate pea soup with winter, but this lemony pea soup is the perfect spring dish! It is very easy and quick to make so you have enough time to enjoy the birds chirping and watching the flowers bloom. Perfect for those colder spring days and bringing the spring feeling to your taste buds.

- 1 immersion blender
Ingredients
- 4 spring onions
- 450 grams frozen peas
- 1 vegetable stock cube
- 200 ml soy/oat cream
- 1 lemon (zest and juice)
Instructions
- Cut the spring onions into small pieces
- Add some oil to a pan and put it on medium-high heat
- Add the cut spring onions in the pan with the frozen peas. Fry it until the peas are defrosted
- Take 2-3 tablespoons of the pea and spring onion mix out of the pan and set it aside
- Add the cream, along with 300 ml of water and the vegetable stock cube to the pan with the peas and spring onions. Let it simmer on medium heat for 15 minutes
- After 15 minutes, puree the soup with an immersion blender until smooth
- Add 2 tbsps lemon juice, or more to taste, to the soup
- Add halve of the lemon zest to the soup. Mix the rest of the lemon zest with the pea and spring onion mix that you put of to the side
- Pour the soup into a bowl and add some of the pea, spring onion and lemon zest mixture to the top
- Enjoy!
