Garden Pasta

Buying many fresh ingredients is sometimes stressful, what do you need to do with the leftovers? No worries, with this recipe you only need a few fresh ingredients and the other main ingredients just need a space in your freezer, and you'll still have a meal that tastes like it came straight out of your garden! This recipe is a healthy, quick and easy meal that you can eat all year long!

Ingredients
  

  • 250 g Pasta
  • 250 g Cherry tomatos
  • 1 Block of vegan greek white feta cheese use a brand u like
  • 125 g Frozen peas
  • 125 g Frozen green beans
  • Basil (Fresh or frozen)
  • 2 Cloves of garlic

Instructions
 

  • Wash your cherry tomatoes and cut them in half
  • Cut the garlic into small pieces
  • Place the peas and beans into a microwaveable bowl with a few drops of water, then defrost them in the microwave. (the time needed for this depends, start with 2 mins of 800 watt, then give it a stir and check to see if it needs longer)
  • If you are using fresh basil, wash some leaves and chop them into small pieces
  • Add some oil to a pan, once the oil is warm, add the garlic and let it simmer for around 30 seconds
  • Add the tomatoes to the pan
  • Add a sprinkle of salt and pepper over the tomatoes, give them a stir and then let them simmer on medium to high heat
  • Whilst the tomatoes simmer, fill a pot with water and cook the pasta and cook them according to the instructions on the packet
  • Once the pasta is done, drain the pasta, then leave the pasta in the pot.
  • Using your hands, crumble the cheese on top of the pasta and give it a stir.
  • Now add the tomatoes, peas and beans to the pot of pasta. If the peas and beans are still a bit hard, let the mixture sit on low heat while stirring regularly.
  • Add the basil and some more salt and pepper if needed. (If you like, you can also add some extra olive oil)
  • Enjoy!
