
Eggplant Sandwich
Are you getting bored of your dutch, single topping sandwiches? Or do you just need some new sandwich inspiration? Try this easy eggplant sandwich! With a refreshing salad and delicious fried eggplant, it is the perfect lunch recipe!
Equipment
- Frying pan
Ingredients
- 1 tomato
- 1/3 cucumber
- 1/2 red onion
- lemon juice to taste
- 1 baguette or 2 small breads
- hummus a spicy hummus works very well
- 1 small eggplant
Instructions
- Cut the cucumber, tomato and red onion in small cubes.
- Mix your cut up vegetables with some salt, pepper and lemon juice to taste.
- Cut your eggplant in round slices with a thickness of about ½ centimeter.
- Heat up some oil in a pan.
- Place your eggplant slices in the pan and season them with some salt. You might want to roast your slices in phases if your pan is small.
- When the side facing the pan is starting to turn brown, flip the eggplant slice and fry the other side.
- When both sides are slightly brown, take them out of the pan.
- Assemble your sandwich by cutting open your bread. Spread the hummus on both sides of your bread, place your eggplant slices on the sandwich and add your salad on top.
- Enjoy!
Notes
- If you have leftover salad, you could also eat it as a little side salad.
