Creamy pumpkin pasta

  • (Hand)blender


  • 50 gram cashews (soaked; see the instructions below)
  • 250 gram pumpkin
  • 100 ml plant milk
  • 100 ml vegetable stock
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tbsp nutritional yeast optional
  • salt and pepper to taste
  • parsley optional
  • 160 gram pasta


  • For this recipe, you have to soak the cashews. Boil some water in a pan, add the cashews and put the lid on. Let it soak for at least an hour. The softer the cashews, the creamier your sauce will be
  • Cut the pumpkin in cubes
  • Cook the pumpkin in 8 minutes
  • Meanwhile, cook your pasta according package instructions
  • Drain the pot with pumpkin, add all the other ingredients (except for the pasta) and mix till smooth with your blender
  • Add the pasta to your sauce and toss
  • Add salt and pepper to taste, and top off with some fresh parsley (optional)
