Creamy pumpkin pasta
Some days all you need is an easy, healthy and delicious creamy pasta

Ingredients
- 50 gram cashews (soaked; see the instructions below)
- 250 gram pumpkin
- 100 ml plant milk
- 100 ml vegetable stock
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tbsp nutritional yeast optional
- salt and pepper to taste
- parsley optional
- 160 gram pasta
Instructions
- For this recipe, you have to soak the cashews. Boil some water in a pan, add the cashews and put the lid on. Let it soak for at least an hour. The softer the cashews, the creamier your sauce will be
- Cut the pumpkin in cubes
- Cook the pumpkin in 8 minutes
- Meanwhile, cook your pasta according package instructions
- Drain the pot with pumpkin, add all the other ingredients (except for the pasta) and mix till smooth with your blender
- Add the pasta to your sauce and toss
- Add salt and pepper to taste, and top off with some fresh parsley (optional)
