Ingredients
  

Dry ingredients

  • 250 g flour
  • 3 tsp baking powder
  • A pinch of salt
  • 75 g sugar
  • 1/2 tsp cinnamon

Wet ingredients

  • 250 ml plant milk
  • 6 tbsp olive oil
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 250 g frozen blueberries

Instructions
 

  • Pre-heat the oven at 180°C
  • Line a muffin or cupcake tray with paper
  • Mix the wet ingredients in a large bowl
  • Mix the dry ingredients in a second bowl
  • Add the dry ingredients to the wet ingredients and mix together
  • Fold the blueberries into the batter
  • Pour the batter into the cups (until they are ⅔ full)
  • Bake for 30 minutes
  • Let them cool down a bit before you start munching

Notes

Pro-tip: mix the blueberries with a little flour before adding them to the batter to keep them from sinking to the bottom of the muffin.
