
Blueberry Muffins
Blueberry Muffins are a classic. With these 10 ingredients and easy instructions, any student can make them.

- Muffin/cupcake tray
Ingredients
Dry ingredients
- 250 g flour
- 3 tsp baking powder
- A pinch of salt
- 75 g sugar
- 1/2 tsp cinnamon
Wet ingredients
- 250 ml plant milk
- 6 tbsp olive oil
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- 250 g frozen blueberries
Instructions
- Pre-heat the oven at 180°C
- Line a muffin or cupcake tray with paper
- Mix the wet ingredients in a large bowl
- Mix the dry ingredients in a second bowl
- Add the dry ingredients to the wet ingredients and mix together
- Fold the blueberries into the batter
- Pour the batter into the cups (until they are ⅔ full)
- Bake for 30 minutes
- Let them cool down a bit before you start munching
Notes
Pro-tip: mix the blueberries with a little flour before adding them to the batter to keep them from sinking to the bottom of the muffin.
