Beetroot Orzo

The perfect main dish to add to your Christmas dinner, or of course any other time of the year! Easy to make with seasonal vegetables!

Ingredients
  

  • 2 red onions
  • 250 g pre-cooked beetroot
  • beetroot juice
  • 750 ml vegetable broth
  • 200 g orzo
  • 50 ml soy cuisine (room)
  • vegan feta cheese
  • 1 lemon
  • nuts (e.g. cashews)
  • salt
  • pepper
  • cumin

Instructions
 

  • Cut the onions into small pieces, add them with a little olive oil to a pan and let it cook for about 6 minutes.
  • In the meantime, you can dice the beetroot.
  • Add the red beet, the remaining juices of the red beet, vegetable broth and orzo to the pan and let it cook for about 15 minutes.
  • Add the soy cusine and season to taste with salt, pepper and cumin,
  • Serve it with a bit of grated feta cheese, lemon and some crushed nuts for extra texture.
  • Enjoy!
