Beetroot Orzo
The perfect main dish to add to your Christmas dinner, or of course any other time of the year! Easy to make with seasonal vegetables!
Ingredients
- 2 red onions
- 250 g pre-cooked beetroot
- beetroot juice
- 750 ml vegetable broth
- 200 g orzo
- 50 ml soy cuisine (room)
- vegan feta cheese
- 1 lemon
- nuts (e.g. cashews)
- salt
- pepper
- cumin
Instructions
- Cut the onions into small pieces, add them with a little olive oil to a pan and let it cook for about 6 minutes.
- In the meantime, you can dice the beetroot.
- Add the red beet, the remaining juices of the red beet, vegetable broth and orzo to the pan and let it cook for about 15 minutes.
- Add the soy cusine and season to taste with salt, pepper and cumin,
- Serve it with a bit of grated feta cheese, lemon and some crushed nuts for extra texture.
