Banana bread

A classic, great at any moment during the day and perfect if your bananas are almost unedible.

Equipment

  • loaf pan 20 cm

Ingredients
  

  • 4 large overripe bananas
  • 50 ml neutral tasting oil for example sunflower
  • 250 gr flour
  • 50 gr sugar
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • dash salt

Instructions
 

  • Preheat the oven to 180 degrees celsius
  • Grease your loaf pan or use parchment paper
  • Mash three bananas in a (mixing) bowl and add the oil and the vanilla extract
  • Mix the dry ingredients (flour, baking soda, baking powder, sugar and cinnamon) in a separate bowl
  • Add the mixture of dry ingredients gradually to the wet ingredients and stir to combine them
  • Pour the batter into the loaf pan
  • Cut the fourth banana horizontally and put it on top of the batter
  • Bake for about 45 minutes (baking time may vary a bit depending on your oven)
  • Remove from the oven and let it cool completely before slicing
    You can easily freeze your slices of banana bread if it is too much to finish in one sitting 😉

Notes

Variation tip: add some chopped (wal)nuts or dried fruit
