
Avocado pesto
Who doesn't love pesto? This home-made pesto is great, because it replaces the pine nuts for sunflower seeds to make it more affordable.
Equipment
- food processor or blender
Ingredients
- 1 avocado
- 15 grams fresh basil
- 3 tbsp sunflower seeds
- 30 grams nutritional yeast
- 3 tbsp lemon juice
- 2 gloves garlic
- plant milk
- salt and pepper
- spinach optional
- oil optional
Instructions
- Roast the sunflower seeds in a dry pan
- Add all the ingredients – except from the plant milk and oil – to your food processor
- Add some leaves of spinach to give your pesto a dark green colour (optional)
- Add your plant milk bit by bit until you reach your desired consistency
- If you want, you can also add some oil
Notes
Because of the avocado, this recipe creates a bigger portion of pesto than you’re used to from store-bought pesto.
