Avocado pesto

Who doesn't love pesto? This home-made pesto is great, because it replaces the pine nuts for sunflower seeds to make it more affordable.

  • food processor or blender


  • 1 avocado
  • 15 grams fresh basil
  • 3 tbsp sunflower seeds
  • 30 grams nutritional yeast
  • 3 tbsp lemon juice
  • 2 gloves garlic
  • plant milk
  • salt and pepper
  • spinach optional
  • oil optional


  • Roast the sunflower seeds in a dry pan
  • Add all the ingredients – except from the plant milk and oil – to your food processor
  • Add some leaves of spinach to give your pesto a dark green colour (optional)
  • Add your plant milk bit by bit until you reach your desired consistency
  • If you want, you can also add some oil


Because of the avocado, this recipe creates a bigger portion of pesto than you’re used to from store-bought pesto.
